Cook Faster, More Efficiently with Induction Heat

March 29, 2025
For many years, electricity has been considered a lesser cooking fuel to gas, but times — and technologies — are changing.
Induction cooking is an efficient method of cooking that uses electromagnetic energy to directly heat pots and pans. Unlike traditional gas or electric stovetops that rely on heating elements, induction cooktops work by creating an electromagnetic field beneath the cooking surface.
Electric induction cooking provides heat instantly, heating pans directly rather than the surrounding air or burner. As instantly as it heats up, the cooktop remains cool to the touch because only the pan is heated, making it safer and more energy efficient.
There are three types of induction cooktops to consider. Portable induction cooktops are single-burner units that good for small kitchens, portable cooking or just trying it out while you consider a larger investment. Built-in cooktops are integrated into your kitchen counter while induction ranges combine induction cooking elements with an oven.
In addition, many models allow you to adjust the power output in very small increments, providing greater control as well as the ability to “boost” the power output to rapidly increase the amount of heat for fast boiling or searing.
It is important to note that induction cooking does require cookware that is magnetic, which may require additional investment. The easiest way to know if a pan is magnetic is to simply see if a magnet sticks to the bottom. Materials that are good include cast iron, stainless steel or enamel-coated cast iron, but be sure to use the magnet test.
Induction cooking is gaining popularity due to its efficiency, safety and convenience. As technology advances, more features such as smart connectivity, automatic pot detection and integration with home automation systems are expected to enhance the cooking experience. Its growing adoption suggests induction will be a major part of the future of home cooking.
